Quinoa & Broccoli
I know that is a strange word to many of y'all, but look it up. Seriously yummy goodness right there!!! *BONUS* 12 g of protein per serving!!! It's good and good for you!!!
If you have a rice cooker it's fairly easy to cook. 1/2 c quinoa to 1 c water. On the stove I'm not sure. We have a rice cooker. While my quinoa is cooking, I have broccoli on top steaming. This usually takes 20 minutes. Timed perfectly with the chicken cooking in the oven. With quinoa, we've added different dressings or spices to the water for flavoring purposes. The quinoa will absorb the flavor of what ever you choose to cook with it. YUMMY!!!!
Once that's all done. I plate the meal. I realize I watch way too many cooking shows, but tell me, who doesn't just want to dig in to all that beautiful food they make!!!! I spoon the sauce on top of the chicken. Not too much, I want to taste my chicken too. I add a bit to the quinoa as well. I add just a pinch of salt to my broccoli.
Now you have a yummy dinner, it's healthy, and you will be coming back for more too!!!!
